PALEO COOKIES THAT MAKE YOU FEEL LIKE YOU AREN'T MISSING OUT

Don't you hate feeling like you're missing out? Here you are just trying to reach your goals of maintaining a healthy and balanced diet whilst your besties, boyfriend or (for me) husband, are eating all the junk food they like right in front of you. It only makes you crave it more! Well, I stumbled across a paleo based cookie recipe which I have altered to my liking (I never follow recipes, I always change them to what suits me). I personally think these are delicious and love being able to indulge in a healthier version of a choc chip cookie. Even Jacob, my husband, likes them! So, here is the recipe:


INGREDIENTS

1 1/2 cups almond flour

1/2 cup coconut flour

2 tbs coconut sugar

1/2 tsp baking powder

Sprinkle of Himalayan salt

1 cup of chopped dates

1/4 cup of your choice: cranberries / nuts / dark chocolate*

1/2 cup rice malt syrup

1/2 melted coconut oil

1 tbs chia seeds soaked in 3 tbs of water for 15 min

1 tsp vanilla essence


METHOD

1. Pre-heat the oven to 180 degrees Celsius (fan forced)

2. Mix the dry ingredients together.

3. In a separate bowl mix the wet ingredients together and then combine with the dry ingredient mixture.

4. Separate the mixture into small balls and place on a baking tray. The recipe should make approximately 15 cookies.

5. Bake the cookies for 12-15 minutes. Set them aside to cool and firm up before consuming.


Enjoy!!!

*The recipe won't be completely paleo if you choose to use dark chocolate however it is still a healthier alternative to milk chocolate when you buy the 70% or more dark chocolate.
